iTouch Jailbreak Categories App Supertrouble?


So, I have an iPod Touch 2nd Generation, running a jailbroken version of the 2.2.1 firmware. I used a program called "QuickFreedom" to generate the software. Using the special installer for unofficial apps, I downloaded an app called Categories, which allows the user to sort their apps into categories, or folders, placed on your home screen. It's a nifty program and it worked just fine, I had four folders and one other app on my home page, one page now, instead of 5; Games, Community, Utilities, and iPod. iPod had like, music, videos, and photos, Community was like IMs and stuff, Games were games, and Utilities was like notes, calender, etc. The one app was my Settings app. It all worked just fine, it kicked ass; I recommend it with small caution. I then wanted to put my Settings app into my Utilities folder. So I set it to and I refresh SpringBoard, the display client for the home screen. It errors like hell; to say the least, my iPod didn't like the settings going off the home page. It kept trying to load; freeze; load; freeze; load; freeze; and so on. It goes on for hours without end. I decide to try to restore my data via iTunes. But I have a passcode lock on, and so I need to disable that before iTunes will do ANYTHING. So I reboot my iPod so I can get to the passcode lock screen and unlock it, maybe to fix it. It boots up for 10 minutes (Not that long, but you know, the LONG bootup time for the iTouch/iPhone, which everyone hates!!) and then the screen stays stuck at the bottom and a load sign comes on. It goes for a minute, and then it freezes. It then sends ANOTHER loading sign ON TOP OF THAT, and so it keeps getting brighter, and continues. It's permanently locked, I can't update to 3.0, or ANYTHING. What am I gunna do? Is there a way to get the Settings app back OUT of the folder? Or do I have to go into this strange "DFU Mode" in which case I'll lose ALL my data? I KNOW for a fact DFU mode will work, but it's a last resort, because I'll lose everything. I got FAR in The Sims 3, Chronicles of Inotia, and so forth (games on my ipod), and I don't want to lose my saves. Due to a backup awhile back I'll keep my Inotia but not my Sims save. What should I do?!
